Having worked all over Australia over the last 20 years in top-line restaurants, Damien garnered a highly unique knowledge of food and wine matching, cellar timeframes, service techniques, viticulture information & producers unique family history & back story to name a few of his many areas of expertise.

Damien has worked for the Pooley Wine family and helped to plant the Butchers Hill Vineyard and also having visited every producer in Tasmania being a local boy growing up in the Coal River Valley.
We pride ourselves on operating luxury half day tours which travel to the Coal River and Derwent Valley regions currently. Visiting wineries, distilleries and paddock to plate producers which depart Hobart Thursday to Sunday.
We also operate full day tour experiences departing Hobart to the East Coast, Southern Peninsula and Hobart icons. These include Mt Wellington, Bonorong Wildlife Sanctuary & Richmond Village, Port Arthur Historic Site.

With our founder Damien Byrne being a local Coal River Valley boy, we have a unique knowledge of the Tasmanian vineyards, the varieties that they are known for, the history of the producers as well as tasting and learning about some of the most famous wines to come out of Tasmania over the past 15 years.
Damien has also worked extensively throughout Australia in the hospitality industry across many fields as well as some of the local tasmanian vineyards which were the Roslyn Vineyard and Pooley Wines Cellar Door here in the Coal River Valley, as well as presenting talks at the Taste of Tasmania and various wine shows.
Obtaining the Certified level from the Court of the Master Sommelier at 23, Damien went on to work for Guy Grossi (Grossi Florentino), Donavon Cooke (The Atlantic) as well as the prestigious Me Wah Restaurant Hobart here in Tasmania.
Having won national and international awards, the most famous being for the Best Medium sized Wine List in Australasia from the World of Fine Wine Magazine as well as 3 stars (2017, Me Wah Hobart) Damien showed his skill and knowledge of styles, quality levels and storytelling across this wine list.
